Food and Beverage Manager

Ambong - Ambong is a family-forged retreat set within the tropical rainforest of Langkawi, Malaysia — an award-winning boutique hotel built on respect for its verdant setting and a commitment to unparalleled, personal hospitality.We are looking for a Food &Beverage Manager to lead our outlets end to end — holding the service standard, thenumbers, and the team culture together in one pair of hands.THE ROLE

• Oversee all Food & Beverage outlets, including restaurants, bars, in-room dining, and events
• Lead, mentor, and develop the F&B team toward consistent operational excellence
• Drive guest satisfaction through service standards, quality control, and proactive engagement
• Develop and execute plans that grow revenue, profitability, and cost discipline
• Own financial performance — revenue, food and beverage cost, payroll, and departmental expenses
• Manage budgeting, forecasting, inventory control, and procurement
• Partner with the Head Chef on menu innovation, quality consistency, and seasonal offerings
• Analyse sales trends, guest preferences, and market conditions to optimise outlet performance
• Oversee events, conferences, weddings, and VIP functions to ensure flawless execution
• Drive upselling and promotional initiatives alongside Sales & Marketing
• Monitor guest feedback, online reviews, and satisfaction metrics to guide improvement
• Ensure full compliance with health, safety, hygiene, and food safety regulationsWHAT YOU BRING
• Proven experience in an F&B leadership role, ideally in a luxury hotel or resort
• Island, remote-location, or multilingual experience is a distinct advantage
• Strong background in multi-outlet operations across restaurants, bars, and banqueting
• Solid financial acumen — budgeting, forecasting, and cost control
• Confident with POS systems and F&B reporting tools
• Strong negotiation and supplier management skills
• Strategic thinker with a hands-on, on-the-floor operational approach
• Diploma in Hospitality Management, Culinary Arts, Business Administration, or related field preferredWHAT WE OFFER
