London, hybrid, minimum 2 days per week in the officePermanentInsurance sectorMcCabe & Barton is partnering with a leading insurance business to hire an Artificial Intelligence Engineer for a hands-on role focused on building and deploying practical AI solutions across the organisation.This is an opportunity to work on real-world Generative AI use cases, including copilots, chatbots, document intelligence tools and LLM-driven workflows, within a regulated insurance environment.The role will suit a pragmatic engineer who can move beyond proof of concept and deliver secure, scalable and production-ready AI solutions.Key experience required:Strong Python and backend engineering experienceHands-on experience with OpenAI and/or Anthropic Claude APIsPractical experience with prompt engineering and LLM application developmentExperience with RAG, embeddings and vector databasesGoogle Cloud Platform experience, ideally including Vertex AIFamiliarity with CI/CD, Docker and modern cloud architectureAbility to work with both structured and unstructured dataStrong understanding of security, scalability and production-readinessExperience in insurance, financial services or another regulated environment would be advantageous, but the key requirement is proven hands-on AI engineering capability.This is a strong opportunity to join a business investing in applied AI and to help shape solutions that deliver tangible operational and commercial value.
