Department: Maintenance / EngineeringPosition: Maintenance TechnicianReports to: General Management / Operations ManagementJob SummaryWe are seeking an experienced and hands-on Maintenance Technician to provide daily maintenance and technical support across Billionaire Dubai and Lion in the Sun.The successful candidate will have practical experience with commercial kitchen equipment, refrigeration and chiller systems, air-conditioning and ventilation systems, electrical and plumbing repairs, and general facilities maintenance.The primary objective of the role is to ensure that both venues remain fully operational, safe and properly maintained, while minimising equipment breakdowns and disruption to daily operations.Key Responsibilities1.

Commercial Kitchen EquipmentInspect, maintain and troubleshoot commercial kitchen equipment, including ovens, grills, fryers, dishwashers and other appliances.Perform basic mechanical and electrical repairs.Identify technical faults and coordinate specialised repairs when required.Conduct regular preventive maintenance to reduce equipment breakdowns.2. Air Conditioning and VentilationMonitor and perform basic maintenance on air-conditioning and ventilation systems.Troubleshoot cooling, airflow and ventilation issues.Demonstrate a practical understanding of AHUs, FCUs and kitchen extraction systems.Coordinate major technical issues with Mandarin Oriental’s engineering team.3. Refrigeration and ChillersMaintain and troubleshoot refrigerators, freezers, chillers, ice machines and cold-storage equipment.Monitor equipment temperatures and cooling performance.Identify refrigeration faults and arrange prompt corrective action.Ensure that all equipment operates safely and efficiently.4. Electrical, Plumbing and General MaintenancePerform basic electrical repairs involving lighting, switches, sockets and fixtures.Handle minor plumbing repairs, including leaks, blocked drains and damaged fittings.Repair doors, locks, furniture, fixtures and other general equipment.Maintain guest areas, kitchens, bars and back-of-house facilities across both venues.5. Daily Operations and Preventive MaintenanceConduct daily technical inspections of both restaurants.Follow and maintain a preventive maintenance schedule for equipment and facilities.Respond promptly to urgent maintenance requests, particularly during operating hours.Maintain accurate records of inspections, repairs, servicing and outstanding issues.Coordinate with hotel engineering, external contractors, suppliers and specialist technicians.Ensure that all maintenance work complies with applicable health, safety and operational standards.Follow up on reported issues until they have been fully resolved.RequirementsMinimum of three to five years of maintenance experience, preferably within luxury restaurants or five-star hotels.Strong practical knowledge of commercial kitchen equipment.Good understanding of refrigeration, chiller, air-conditioning and ventilation systems.Basic electrical, plumbing, mechanical and general repair skills.Ability to diagnose and resolve minor technical issues independently.Experience in preventive maintenance and equipment inspections.Good command of spoken and written English, with the ability to communicate effectively with management, hotel engineering teams, contractors and suppliers, and to maintain clear maintenance records and reports.Flexibility to work evenings, weekends and public holidays when required.Reliable, proactive, organised and capable of working effectively under pressure.Previous hospitality maintenance experience in Dubai is preferred.Key ExpectationsEnsure that both Billionaire Dubai and Lion in the Sun remain fully operational and properly maintained.Minimise equipment breakdowns and service interruptions.Identify and resolve technical issues before they affect operations or the guest experience.Maintain high technical, safety and presentation standards throughout both venues.Take ownership of daily maintenance activities and ensure timely follow-up.Work closely with the management teams of both venues and Mandarin Oriental’s engineering department.Ideal CandidateA multi-skilled, practical and solution-oriented Maintenance Technician who can independently manage most day-to-day technical issues across both venues, particularly those involving kitchen equipment, refrigeration, air conditioning, electrical systems, plumbing and general repairs, while coordinating more complex work with appropriately qualified specialists.
