Sous Chef (Arabic) – CulinaryPlaza Premium GroupJOB SCOPEResponsible for the overall culinary operation of the Lounge, ensuring the highest standards of food quality, guest satisfaction, food safety, cost control and team performance. Lead all aspects of kitchen operations including production planning, menu execution, product development, inventory management, labor scheduling, supplier coordination and compliance with company and airline standards. Drive continuous improvement while maintaining authentic Middle Eastern hospitality and premium airport lounge service.JOB RESPONSIBILITIESOverall person-in-charge of the kitchen operation.Lead food quality, consistency, buffet and à la carte execution.Manage food cost, wastage within budget and inventory.Develop and improve menus and recipes.Ensure authentic Middle Eastern, Arabic and International cuisine standards.Maintain HACCP and Dubai Municipality food safety compliance.Lead, train and develop the culinary team.Coordinate with Operations, Procurement and QA.Support smooth operations during peak flight schedules.Able to handle emergency issues of kitchen and answer enquiriesTo put into effect team’s cooperation and work towards the development, implementation, maintenance and improvement of the quality management system.Take initiative to identify areas for improvement and participate in continual improvement activities.Undertake other jobs assigned by superiors from time to time.Monitor daily food cost, labour productivity and kitchen KPIs to achieve operational targets.JOB REQUIREMENTSMinimum 7 years' experience as Sous Chef/Jr Sous Chef.Minimum 4 years' experience in the Middle East (mandatory).Strong knowledge of Arabic, Middle Eastern and International cuisine.Airport lounge, hotel or airline catering experience preferred.Computer literacy.Additional Requirements:Willing to work rotating shifts, weekends and public holidays in a 24/7 airport environment.Flexible to be deployed to any Plaza Premium Group operation within the UAE or internationally based on business requirements.Demonstrates professionalism, teamwork and commitment to premium guest service.
