Job Location : Casino Hotel, KochiRole Description This is a full-time, on-site Sous Chef role based in Casino Hotel, Kochi. The Sous Chef will support the Executive Chef & Senior Sous Chef in managing daily kitchen operations, including menu preparation, cooking, and supervising kitchen staff to ensure consistent quality and presentation of dishes. The role involves planning and executing meals that reflect CGH Earth’s emphasis on local ingredients, regional cuisine, and sustainable practices, while adhering to food safety and hygiene standards. The Sous Chef will assist in inventory management, ordering supplies, and controlling food costs, as well as training and mentoring team members in techniques, recipes, and hospitality standards. Collaboration with other departments to support restaurant service, special events, and guest experiences is an integral part of the day-to-day responsibilities.QualificationsProfessional culinary Degree or Diploma from a recognized culinary institute, with experience as a Sous Chef or Senior Chef de Partie in quality hotels or resorts.Strong skills in food preparation, cooking techniques, and plating, with a focus on regional Indian cuisine and the ability to incorporate local, seasonal ingredients.Knowledge of food safety, hygiene regulations, and kitchen best practices, with a consistent focus on cleanliness, organization, and safe working conditions.Experience in supervising kitchen teams, delegating tasks, and training staff, with the ability to maintain calm and efficiency during busy service periods.Capability to manage stock levels, support menu planning, assist with costing, and reduce waste in line with sustainable and responsible operations.Effective communication and collaboration skills for working closely with front-of-house teams and management to deliver high-quality guest experiences.Flexibility to work shifts, weekends, and holidays as required, and a commitment to CGH Earth’s values of sustainability, local engagement, and conscious luxury.Prior experience in eco-conscious or boutique hospitality environments is an advantage; basic English communication skills are beneficial.
