Apply & track with Apply EdgeResponsibilitiesStrategic Sourcing & Procurement: Lead purchasing across all F&B and Entertainment concepts (food, beverage, packaging, uniforms, operating supplies). Develop a 12-month forward procurement plan, manage vendor master lists, and secure alternative suppliers for high-risk, critical items.SOPs, Policies & Systems: Design the supply chain organizational structure. Draft and implement the Supply Chain Policy Manual and SOPs (sourcing, inventory, receiving). Establish internal/external SLAs and create an ERP roadmap with standardized SKU coding.Vendor Management & Compliance: Build a centralized vendor database. Ensure all food suppliers are whitelist-approved and ISO/HACCP certified. Negotiate structured supplier agreements covering delivery, volume pricing, and payment terms while conducting routine performance audits.Cost Control & Budget Discipline: Maintain spend within approved budgets. Implement strict cost control workflows, including three-quote thresholds, PO-to-invoice validation, and GRN matching with Finance. Propose aggressive cost-saving and bulk-purchasing strategies.Inventory & Risk Management: Plan purchasing based on outlet consumption and central kitchen forecasts to maintain optimal buffer stocks and eliminate stockouts. Mitigate risk by tracking import delays, currency impacts, and maintaining an emergency vendor list.Pre-Opening Setup & Scalability: Lead supply chain setup for new restaurant openings and entertainment venues. Advise on warehousing, logistics, and distribution models built to support a rapidly growing multi-concept portfolio.Reporting & Collaboration: Deliver comprehensive quarterly supply chain performance reports (spend analysis, savings, KPIs). Partner closely with Operations, Central Kitchen, and Finance teams to align supply readiness with operational timelines.QualificationsBachelor's degree in Supply Chain Management, Logistics, Business Administration, Hospitality Management or a related field; equivalent industry experience may be considered.Minimum 5-7 years of experience in food & beverage procurement, supply chain, purchasing, logistics or vendor management.Fine dining purchasing, sourcing or supply chain experience is required, due to the quality, freshness and specialty supplier standards of the role.Experience managing procurement and supply chain across multiple restaurants, outlets, central kitchen operations or hospitality sites is strongly preferred.Pre-opening supply chain setup experience is strongly preferred, including supplier onboarding, approved lists, product specifications and purchasing flows.Demonstrated experience negotiating supplier contracts, managing food cost, controlling inventory budgets and building procurement systems across multiple locations.Track record of developing sourcing standards, SOPs, policy manuals, supplier systems or procurement playbooks.
